A. Okay, My wife is from Taiwan and she is awesome, extremely actractive and very smart...but...like ALL women she is hardheaded and stubborn...lol seriously though...Asian women tend to be very conscious of how they come across to others in public but at home they are themselves and in my experiences women are women. Treat her respectfully and treat her like a queen and she will love you forever.

A. Authentic Japanese is quite different from authentic Chinese. Chinese cuisine should ideally be about using herbs and spices to bring out the flavor in each dish. Japanese cuisine, well, tends to favor sweet and sour foods (the impression of that as Chinese is incorrect; only Cantonese food tastes sweet) & focuses a lot on the materials themselves and the preparation. In China, the design is very important -- believe it or not, good dishes have to look pleasing and have a "lucky" name. Another difference is Japanese will eat raw food (esp. fish), and most Chinese hate anything raw, except maybe spices like garlic, ginger, and green onions.

How do Chinese restaurants have 140 different menu items?
Q. I am curious about this. How do Chinese restaurants have so many different dishes to offer? I know they have a variety of beef, chicken, shrimp etc, sauces and seasonings, and vegetables. I am just amazed by how quickly they can make up whatever you order. Do they prepare a bunch and freeze it in small batches then microwave it before serving it to you? I just can't imagine a chef whipping up each dish from scratch every time. Anybody ever actually work in a Chinese restaurant?

A. Those are all good answers. Let me add this: The dimsum dishes are mostly steamed or deep fried. All the dimsums are assembled overnight (for brunch) and the whole morning (for dinner). It takes only a few minutes to steam or fry them. There are, literally, hundreds of dimsum varieties. The sir-fried dishes (inclding chow mien, sweet-sour) cook in a couple of minutes. All the veggies and meats are pre-sliced, and all the sauces are ready to pour in. The woks are all super-hot. The other dishes are stews which could be microwaved, and roasts, which are served at room temperature.
