Sushi (寿司, 鮨, or 鮓) is a Japanese dish consisting of cooked vinegared rice which is commonly topped with other ingredients, such as fish or other seafood, or put into rolls. Sliced raw fish by itself is called sashimi, as distinct from sushi. Sushi that is served rolled inside or around dried and pressed sheets of seaweed (or nori) is makizushi (巻き). Toppings stuffed into a small pouch of fried tofu is inarizushi. A bowl of sushi rice with toppings scattered over it is called chirashi-zushi (ちらし). From Wikipedia under the

Q. This probably sounds really stupid and all, but forgive me for not knowing too much about sushi, except that it tastes good and is raw. I wanted to know if sushi is specially cleaned and prepaired before being served, or can you buy fish such as salmon from the supermarket, clean it and use that to make your own sushi? Asked by Jim - Tue Apr 18 16:35:15 2006 - - 6 Answers - 2 Comments A. it really depends on where you live..for the most part, a fish market is best, not only becasue its fresh, but they can help you get the right cut...some markets can get super fresh fish, but its worth it to talk to someone in the fish dept Answered by preciouseureka - Tue Apr 18 19:58:42 2006 Why is insulting to the sushi chef at a sushi bar to order a california roll or smoked salmon roll?
Q. Someone told me that it was insulting to a sushi chef to order california rolls or smoked salmon rolls when you go out for sushi. Is this true? Why? Asked by superqtip112000 - Mon Jun 8 12:31:01 2009 - - 6 Answers - 0 Comments A. It can be true depending on where you go. This will NEVER be true in a Chinese or Korean-owned sushi place... ever. This will sometimes be true in a Japanese-owned sushi place. It's because California rolls and smoked salmon rolls aren't traditional sushi by any means. I think some chefs might get irritated because ordering these things is essentially ignoring all real sushi and catering to American tastes. California rolls and smoked salmon rolls are pretty much American food. Why would you go to a Japanese place just to order American food?
