Southeast Asia (or Southeastern Asia) is a subregion of Asia, consisting of the countries that are geographically south of China, east of India and north of Australia. The region lies on the intersection of geological plates, with heavy seismic and volcanic activity.

Southeast Asia consists of two geographic regions: the Asian mainland, and island arcs and archipelagoes to the east and southeast. The mainland section consists of Burma (Myanmar), Cambodia, Laos, Thailand, Vietnam and Peninsular Malaysia while the maritime section consists of Brunei, East Malaysia, East Timor, Indonesia, Papua New Guinea, the Philippines, and Singapore.

Geographically speaking southern China, Taiwan, Hong Kong and Macau are sometimes grouped in the Southeast Asia subregion, although politically they are rarely grouped as such. Vietnam is culturally and historically tied to East Asia rather than Southeast Asia.

Austronesian peoples predominate in this region. The major religions are Islam and Buddhism, followed by Christianity. However a wide variety of religions are found throughout the region, including many Hindu and animist-influenced practices.

What kind of fish is best used in Southeast Asian cooking?
Q. I've been making a lot of Southeast Asian (Thai, Vietnamese, Indonesian) curries lately. I typically use chicken in my curries, but I'm trying to add more fish to my cooking routine. I'm not as knowledgeable about fish as I'd like to be, so I don't know what type of fish would be best in Southeast Asian cooking. Any help would be greatly appreciated. Thanks!

A. They tend to use whatever they can get their hands on. Singapore Chile Crab with Spinach 1/2 cup water 1/4 cup ketchup 1 tablespoon reduced-sodium soy sauce 1 tablespoon tomato paste 1 teaspoon cornstarch 1 tablespoon toasted sesame oil 1/4 cup minced shallot 2 tablespoons minced garlic 2 tablespoons minced red chile, or to taste 1 1/2 tablespoons minced fresh ginger 1 6-ounce bag baby spinach 1 pound pasteurized crabmeat, drained if necessary 1. Whisk water, ketchup, soy sauce, tomato paste and cornstarch in a medium bowl. 2. Heat oil in a large skillet over medium-high heat. Add shallot and cook, stirring occasionally, until softened, about 1 minute. Add garlic, chile and ginger and cook, stirring, until fragrant, about 30 seconds.… [cont.]

Q. From 1945-1985, it used to be the Philippines because of its close relations to the USA and it has the best economy in the entire SEA. Needless to say, it deteriorated gradually from 1970s. So the question is, which SEA country is now the dominant one?

A. Singapore wins hands down. The economy is relatively in better shape than other SEA countries. Foreign businessmen are still confident in the political and economic stability in Singapore. It is a progressive nation. Coming up fast are Vietnam and Indonesia with good governance and transparency. Thailand is embroiled in internal politicking. So too is Malaysia which has lost its appeal with many half past six policies. USA is losing respect for Malaysia. Human trafficking, reversal in the teaching of Maths and Science in English, mishandling of the opposition's political aide by MACC and the police, immature protests by UMNO members to save their own skin, etc, have all eroded the people's confidence.
