When I make Chinese or Indian dishes using chicken breast, how do I prevent the chicken from becoming rubbery?
Q. Every time I try to make Indian curries or Chinese Stir Fry or Chinese dishes where the chicken is not fried, the chicken is always rubbery. I buy the chicken breast fresh, cut it into small 1 inch cubes, then freeze it to use as I need. What do I do to make the chicken in these curries or sauces not tough and rubbery, but soft and tender instead?

A. Cut it only before you use it. If you buy it frozen, do not thaw it, and then re-freeze it. When cooking, Chicken takes about 5 - 7 minutes on 2 sides at medium high heat, depending on thickness to be just-done. For Chinese dishes, always stir-fry the vegetables first, then set aside. Then do the chicken/sauce and the stir in the veggies. If you are simmering, only add the chicken when there is about 25 minutes or so left of cooking time.

What are some healthy Chinese food dishes I can make at home?
Q. My husband and I are both on Weight Watchers, but we are craving Chinese food. We are sick of stir-fry, so what are some other healthy Chinese food dishes we can cook at home? Skill level and equipment are not an issue - I have all sorts of kitchen gadgets. Thanks!

A. here are several from my cook book. Kung Pao Tofu 1 Tbs. rice wine 1 Tbs. peanut oil 1 Tbs. soy sauce tsp. kosher salt 1 Tbs. cornstarch 1 package extra firm tofu, drained and cut into 1/2" cubes In a Zip-lock bag combine the above ingredients and close bag. Shake well to combine, place in a refrigerator for 20 to 30 minutes. 3 Tbs. light soy sauce 2 Tbs. rice wine 3 Tbs. rice vinegar 2 Tbs. sugar 2 Tbs. Hoisin sauce 2 Tbs. peanut oil 4 dried red chilies, stems removed and halved inch piece ginger, peeled then mashed 1 clove garlic, peeled and mashed 1 green onion, cut in inch pieces; greens julienne for garnish c. roasted peanuts or cashews 2 Tbs. chicken stock 1 Tbs. cornstarch, combined with chicken stock to make a… [cont.]

How do I get rid of Chinese characters in Internet Explorer?
Q. My web browser (Internet Explorer version 6.0.29) displays Chinese characters for certain combinations of English characters. So when I read news articles (for example), Chinese characters are intermingled among the English words. Does anyone know how to turn off that "feature" in Explorer? Thanks!

A. To specify another language for Web page content Some Web sites offer their content in several languages. To view these pages in your preferred language, you can add languages to your list of languages in Internet Explorer. In Internet Explorer, on the Tools menu, click Internet Options. On the General tab, click Languages. Click Add. Select the language you want to add. English (U.S.) should be there. If it isn't add it then make it your first choice.
