Q. I like flavorful dishes, and I like Korean and Thai food for that reason. Lots of healthy veggies spiced for more flavor, and tofu. What are more exotic cuisines that use a lot of vegetables? If you can, specific dish names would be great. Thanks.

A. Japanese and Italian diets are the best (I am talking about real traditional Italian dishes, not Italian-American ones which usually are covered with cheese). These two countries have the highest number of people who lives longer lifes due to the complete and healthy diets.

Q. For example, I was surprised to find that London does not have a single Haitian restaurant. It has several Caribbean restaurants - Jamaican, Trinidadian, Bahamian, that sort of thing - but no Haitian, for some reason. That's an odd gap in an otherwise fairly comprehensive culinary scene. A. Just because they are a major city, does not mean they are going to represent all world cuisines - there are just too many. Even though there is a cuisine out there - it doesn't mean there is enough interest in any given city to support a restaurant of that type. The local residents of a large city still have their likes and dislikes and not every cuisine would be popular there.

Traditional Thai, Chinese, Vietnamese, Indonesian, Japanese cuisines do not use dairy products in their cooking; Indian cuisine include yogurt, ghee - both items dairy based and uncommon in the cuisines mentioned. However, certain ethnic groups in China vast northern region do favour milk and derivatives from cows/goats - a Turkic tradition leftover from the Silk Route days.

Being a former chef, and having eaten in a number of local Sri Lankan restaurants, the difference from the Indian and other South Aaian cuisines is not that much, there food is more like Southern India, more coconut milk and spicer than some areas in India, and as a colonial ex pat from England, there is some western influences. Sri Lanka is a varied country, what I mean you have Hindu, Muslim, Sikh and a large Christian (mostly Catholic from the Portugese), so fish, meat veg and rice are the base of there cuisine. The finest tea was and is still grown in Sri Lanka, and still is labelled as Ceylon, the old colonial name for the island. Here are some sites to explain the differences and some recipes.

I'm looking for an unbiased and contemporary list of the top cuisines that exist today, a list compiled by reliable sources (gastronomic experts, experienced chefs, food academics, etc.). There are the traditionally-respected cuisines like French, Italian and Chinese, and there are those that have gained popularity in the Western world, including Thai, Japanese and Mexican. But there must be many we are disregarding, many other cuisines that are diverse and varied, high-quality and flavorful. Two that I have recently heard of are the Lebanese and Peruvian cuisines.

A. chinese has to be one of them...you can find a chinese take out anywhere. Italian is also pretty prevalent with the spread of pizza. I think American has to count as the final one, particularly if you consider the dominance of fast food - burgers, french fries, fried chicken, BBQ Wings are all very commonplace.

A. orange and onion. grapes aren't eaten in INdia and china much, but oranges are. that takes care of most of the population of the world. A. I think Greek food is best. I've lost 5 pounds just eating salads the past two weeks. They are a staple in a Med. diet and there is tons of food combinations you could make. Olive oil is better than any other oil. This diet stresses a variety of nuts, fresh veggies, lean meats, little dairy and low carbs. Asian food is probably second, but not American Chinese/Japanese. You need to eat what they eat in their own country (not the fried stuff in the restaurants). Staples are rice, fish, soups and noodles. The French diet made me gain weight. Too much dairy and fat. They say moderation is key, but who in the world is only going to eat half a pastry. This diet is not good for families that have a history of obesity or heart disease. … [cont.]

A. For me... I would say Italian, French, and Middle Eastern. If I had to choose just one it would be the Italian bc I love every all the different recipes for appetizers, salads, meats, and especially desserts. French for the richness and dessert and Middle Eastern for the wonderful flavors and sweet spiciness.

My son's school hosts a festival celebrating different world cultures every year: each class picks a country to present, and the history, traditions and foods of that country are studies by the whole class. My son's class is presenting Iran, and I'm on the food committee. The classroom across the hall is presenting Iraq. I realize that there are deep distinctions between Iranian/Persian culture and traditions and those of Iraq and the Arab world, and it would be great if the differences between the 2 could be reflected in the foods served. Would I be wrong in thinking that despite those differences, there are many ingredients and flavors common to both cuisines? A. I found this link written by a Persian woman on the differences btw Arab and Iranian foods. Very interesting. I used to be married to an Arab and learned how to cook the food, it's very labor intensive but sooo good. One thing they do in Iran is to serve foods on a Persian rug... you could get an inexpensive oriental rug and that would definitely look the part. Here's the link
