In an electric generator (which isn't a turbine but may be driven by a turbine) voltage is induced in the copper coils. This voltage simply drives the (mobile) electrons around the coil and its external circuit. There are no more or fewer electrons there than when there is no voltage or current - it's just that, under the influence of the voltage they move around a continuous closed loop.
