Haute cuisine (French: literally "high cooking") or grande cuisine was characterised by French cuisine in elaborate preparations and presentations served in small and numerous courses that were produced by large and hierarchical staffs at the grand restaurants and hotels of Europe.

The 17th century chef and writer La Varenne marked a change from cookery known in the Middle Ages, to somewhat lighter dishes, and more modest presentations. In the following century, Antonin Carême born in 1784, also published works on cooking, and although many of his preparations today seem extravagant, he simplified and codified an earlier and even more complex cuisine.

Georges Auguste Escoffier is a central figure in the modernization of haute cuisine as of about 1900, which became known as cuisine classique. The 1960s were marked by the appearance of "nouvelle cuisine" as chefs rebelled from Escoffier's "orthodoxy" and complexity. Within 20 years, however, chefs began returning to the earlier style of haute cuisine, although many of the new techniques remained.

A. I am a former chef and all have one of the correct answers, as stated the term "Haute Cuisine" was coined after the second world war and has stayed when in reference to any high end more refine dish or type/style of food. "Boucher/Bouchere`" can mean either the butcher, in France the butcher shop or meat shop, were you buy all you meat products including pates, terrines and others meats and fowl game and offal. "Commis" in the kitchen is a Chef du Parties "assistant", doing the grunt jobs and learning as he works and then someday achieving the experience and training to become a station chef and have his own brigade of commis to work for him/her. I am a former chef, trained in Classical french cuisine, I am from Canada and bi-lingual,… [cont.]

Q. Hey, I'm a more or less beginner in the French language. I just wrote a poem about Paris... and I'd like to make sure the spelling and grammar is all correct. PLEASE don't just use babel fish or any online translater. I need a real francophone. This translation, I think is syntically accurate, BUT one would want to aquire more knowledge of the language before attempting such subject as it would sound strange for a French speaker. Q. is the beggining of italian cuisine belongs to the greeks? during the renaissance period, italian cookin became the "mother cuisin" the source of all other western cuisines? french gave italy credit for laying the foundation for the french haute cuisie? thank you!
