Haute cuisine (French: literally "high cooking") or grande cuisine was characterised by French cuisine in elaborate preparations and presentations served in small and numerous courses that were produced by large and hierarchical staffs at the grand restaurants and hotels of Europe.

The 17th century chef and writer La Varenne marked a change from cookery known in the Middle Ages, to somewhat lighter dishes, and more modest presentations. In the following century, Antonin Carême born in 1784, also published works on cooking, and although many of his preparations today seem extravagant, he simplified and codified an earlier and even more complex cuisine.

Georges Auguste Escoffier is a central figure in the modernization of haute cuisine as of about 1900, which became known as cuisine classique. The 1960's were marked by the appearance of "nouvelle cuisine" as chefs rebelled from Escoffier's "orthodoxy" and complexity. Within 20 years, however, chefs began returning to the earlier style of haute cuisine, although many of the new techniques remained.

I need help rewriting this paragraph. I have a paper i have to write on the history of italian cuisine.HELP!?
Q. Italian cuisine has evolved extensively over the centuries. Although the country known as Italy today had not officially formed until the 19th century, the cuisine can claim roots going back as far as 4th century BC. Through various influences throughout the centuries, including neighboring regions, conquerors, high-profile chefs, political upheavals as well as the discovery of the New World, a concrete cuisine has formed to what is known today as one of the premiere cuisines in the world. Does anyone know a good recipe for Sparrow?
Q. I'm serious as a heart attack. I'm bored and between hunting seasons. Didn't put up much game this year and just finished the book "A Scavenger's Guide to Haute Cuisine." Since they're an invasive species I'd be doing the bluebirds a favor by making use of them. I'm really interested to see what you have to say. Keep it pretty simple, I'm no Emeril Legasse.l

A. Here's a recipe from Charles Carter s 1736 City and Country Cook cookbook: Lark, or Sparrow Pye. You must have five dozen at least; lay betwixt every one a Bit of Bacon as you do when you roast them, and a Leaf of Sage and a little Force-meat at the Bottom of your Crust; put on some Butter a top and lid it; when bak d for one Hour, which will be sufficient, make a little thicken d Gravy, put in the Juice of a Lemon; season with Pepper and Salt, so serve it hot and quick.
