You can think of a lattice like graph paper - it's a bunch of repeating units in a regular arrangement. Under the right conditions, you can add some more units to the lattice, like taping on another sheet of paper. Note that a lattice implies that you have a solid substance, because otherwise, the units can move around without forming a regular arrangement. Part of the definition of a compound is that it has more than one element. So O2 is not a compound, but it is a molecule. Since it's a gas under normal conditions, it doesn't form a regular arrangement of repeating units - all the molecules are on their own. H20 is a molecule, and a compound, since it has more than one element. Q. Which is better? I find that if I do a lattice, when its to cut and serve it just breaks apart then the slice ends up looking like a mess. Is there a trick? Or is it just easier doing a solid top? Yes, the lattice looks gorgeous sitting on the buffet until you cut it, then it always crumbles. The thing is how long is the thing going to be on display before being cut? For bake sales etc, the Lattice is much nicer. For every other purpose just solid or decoratively cut top works great. I do lattice sometimes because I don't quite have enough crust to make a nice vented top. I think that is why it was invented!
