Yeasts are eukaryotic micro-organisms classified in the kingdom Fungi, with the 1,500 species currently described estimated to be only 1% of all yeast species. Most reproduce asexually by budding, although a few do so by binary fission. Yeasts are unicellular, although some species with yeast forms may become multicellular through the formation of a string of connected budding cells known as pseudohyphae, or false hyphae, as seen in most molds. Yeast size can vary greatly depending on the species, typically measuring 3–4 µm in diameter, although some yeasts can reach over 40 µm.

The yeast species Saccharomyces cerevisiae has been used in baking and fermenting alcoholic beverages for thousands of years. It is also extremely important as a model organism in modern cell biology research, and is one of the most thoroughly researched eukaryotic microorganisms. Researchers have used it to gather information about the biology of the eukaryotic cell and ultimately human biology. Other species of yeast, such as Candida albicans, are opportunistic pathogens and can cause infections in humans. Yeasts have recently been used to generate electricity in microbial fuel cells, and produce ethanol for the biofuel industry.

Yeasts do not form a single taxonomic or phylogenetic grouping. The term "yeast" is often taken as a synonym for Saccharomyces cerevisiae, but the phylogenetic diversity of yeasts is shown by their placement in two separate phyla, the Ascomycota and the Basidiomycota. The budding yeasts ("true yeasts") are classified in the order Saccharomycetales.

How can my yeast start making rice wine?
Q. I am trying to make rice wine with 2 simple ingredients (steamed glutinous rice and yeast. It's been 2 weeks already and no wine have been made. I can definitely smell it but not a drop of wine visible. The grains seems dry to my perspective. Can it be be cause it is undercooked or that I used the traditional steamer instead of the rice cooker? How can I fix this and allow yeast to produce rice wine?

A. First, you need real rice. Not the stuff you cook at home, but the stuff you plant to make more rice! Moisten the rice seed and allow the rice to germinate. This is the malting process. After malting the rice, pour into a large vat and add lots of water. Boil for an hour, then reduce heat to below 80 degrees. Add yeast and sugar (same amount as rice, measured before malting) and allow to ferment for 3 days. Increase heat to 160 degrees and distill into seperate container.

Where can i find bread yeast in barcelona?
Q. I've been going mad. I have found levedura and levedura de cervesa but it is inactive. does anyone know where to find good old fashioned yeast for baking bread. not baking soda or dead yeast? I'm in Barcelona, Spain and I don't think they sell it in the regular stores.

A. A yeast infection is a imbalance in the good bacteria in the vagina. Yeast infections can appear on other parts of the body, like under breasts, in the fold of arms, under arms, or anywhere that skin touches skin and the bacteria gets out of balance. It is the same type infection as candida. I think all women develop yeast at some time in their life. Women can pass this infection to their male partners which are mostly asymptomatic but can transfer it back to her. hope this helps..
